Cover Versions Sunday Food Thread, 12/9

Inspired by Moon!’s Thursday music thread prompt for cover versions I wanted to ask if any of you have tried to replicate a favorite restaurant dish at home and what kind of success you had. Replicating a restaurant dish without the cooktops, ovens and broilers that are used in professional kitchens require some adaptation. I’m always a bit leery of a famous chef’s cookbook, did the recipe writer allow for changes so these dishes can reasonabley be made in a home kitchen? I do find that Rick Bayless writes good cookbooks but have rarely eaten in one of his restaurants to say how faithful those dishes are. That said it’s also fun to try to wing it and try making something without a recipe to see if you can duplicate a favorite dish.
